The food in the high flatland is made with the agricultural and cattle products from the high mountain areas.

 

 

TYPICAL FOOD

Amongst the agricultural product there are a variety of Andean tubers, mainly potato, “oca”, “izaño”, “yacón”, “olluco”; grains and cereals such as “quinua”, “cañihua”, “tarwi”, apart from barley, wheat, oat and maize.
Amongst the cattle products, there are meats: alpaca, lamb, pork, guinea pig, and several birds, such as “choca”, hen, duck, chicken and fish like trout, kingfish, “carachi” and “ispi”.

There are also local products transformed such as “chuño”, tunta”, “k’aya”, “quispiño” of vegetal origin and “charqui”. “chalona” (meat or fish) of animal origin. Also like spices and ingredients for salads there are “muña”, sage, “chicchipa”, “huacatay”, “ortiga”, water cress, peppermint, oregano, fennel and fresh cheeses as well as creamy and matured.
One or several of the mentioned products are ingredients of typical dishes such as:”pesque”, “chairo”, “thimpo”, scrambled “tunta” or fried cheese, “humacha” cheese, “cauchi” cheese, “quinua” or “cañihuaco” cream, “quinua” dessert, “quinua”, peanut or maize drinks.
